But if its is raining or its cold it may take longer .That will add some babysitting time period. With some practice you will know how to counteract the weather. I cook year around , even with snow on the yard. I just like to use my grill and smoker as often as I can. but back to our do almost nothing or lets say not too much.

Your meat will set out about thirty minutes to get acclimated to the space and warm up some so that the fire doesn’t have to do it. Once done pull off your dinner wrapped in a foil, (I usually do this after about four hours so the juices will help to heavy steam) so that your meat will take in its own juices back into it and you should have a moist dinner to enjoy. Freeze some if its a big amount for later. Enjoy

Trim off a few slivers of fat from the chops leaving the rest on., Put the slivers in a heavy skillet, large enough to hold the chops and heat over low flame till they give up a little fat.

Continue to keep the flame low, add the pork pieces and add the sliced onions and proceed to smother the mix. Add salt and pepper and now cover up the skillet and cook for two hours.

About one hour before serving time start planning the mashing and peeling of the potatoes. Do the same regarding the green vegetable. This is not a time-sensitive recipe so you can loosen up.

Once the 2 hours have elapsed, expose the chops and introduce them to a warm 200 deg oven.

Increase heat to higher flame, pour in the cream and reduce the combination until it has a sauce-like consistency. Take special care not to make it very thick.

Brown pork in oil. Add celery, onion, and soy sauce. Stir fry 3 minutes. Add bean sprouts and stir fry an additional 2 minutes. Serve hot.

BARBECUED PORK STEAKS

This recipe is from an old pamphlet from the National Pork Producers Council.

4 pork blade steaks, cut 1 to 1 1/4-inches thick
1/2 cup bottled barbecue sauce (your choice)
1/3 cup honey
1 tbsp Worcestershire sauce
1 tsp garlic salt
1/2 tsp prepared mustard

Pound steaks with a meat mallet. For sauce, in a small bowl combine the barbecue sauce, honey, Worcestershire sauce, garlic salt and prepared mustard; mix together well.

Place steaks on grill about 4-inches above slow coals.* Cook about 20 minutes on each side. Brush steaks with sauce and continue cooking 10 to 20 minutes more, turning occasionally and brushing with more sauce.

Ingredients for sweet and sour pork recipe:

500 g (1 lb) pork fillet, cut into thick slices
2 tablespoons cornflour
1 tablespoon sherry
1 tablespoon soy sauce
1 tablespoon sugar
oil, for cooking
1 large onion, thinly sliced
1 green capsicum, cut into cubes
2 small carrots, thinly sliced
1 small Lebanese cucumber, seeded and chopped
5 spring onions, cut into short lengths
440 g (14 oz.) can pineapple pieces in natural juice, drained, juice reserved
1/4 cup (60ml/2 fl oz.) white vinegar
1/2 teaspoon salt

Directions for sweet and sour pork recipe:

1. When you want to start cooking the sour pork recipe, first place the pork in a shallow glass or ceramic bowl. Combine the cornflour with the sherry, soy sauce and half the sugar and pour into the bowl. Cover and refrigerate for 30 minutes.

2. Drain the pork, reserving the marinade. Heat the wok until very hot, add 2 tablespoons of the oil and swirl to coat the side. Stir-fry half the pork over high heat for 4-5 minutes, or until the pork is golden brown and just cooked. Remove from the wok, add more oil if necessary and repeat with the remaining pork. Remove all the pork from the wok.

3. Reheat the wok, add 1 tablespoon of the oil and stir-fry the onion over high heat for 3-4 minutes, or until slightly softened. Add the capsicum and carrot, and cook for 3-4 minutes, or until tender. Stir in the marinade, cucumber, spring onion, pineapple, vinegar, salt, remaining sugar and 4 tablespoons of the reserved pineapple juice.

4. Bring to the boil and simmer for 2-3 minutes, or until the sauce his thickened slightly. Return the pork to the wok and toss until the pork is heated through. Serve immediately.
