Great Super Bowl Appetizers

Super Bowl is round the corner, and you as usual are on a diet to fit into those jeans you got! You are thinking of getting some good snacks which everyone will relish and at the same time, you too want to be a part of it so that you don’t get singled out. This recipe will set the tongues of the guest wagging and wanting more of it, because so delicious is this Ham and Cheese Puff Appetizer, the perfect appetizer for super bowl. It is full of delicious taste but what will actually take the cake will be its presentation and the decoration.

These puffy little ham and cheese biscuits make a great snack or appetizer. 1 package reduced-fat refrigerator buttermilk biscuits or rolls – (7 1/2 oz)

3 Tbs seasoned tomato sauce
2 Tbs chopped reduced-fat ham or Canadian bacon
2 Tbs reduced-fat shredded Cheddar cheese

Preheat the oven to 450 degrees.

Spray a small baking sheet with nonstick spray coating. Set aside. Open the biscuit carton, and separate the biscuits. Place them on the baking sheet. With a small spoon, spread the tomato sauce on the biscuits, dividing the mixture evenly. Top with the ham and cheese, dividing evenly. Bake in the center of the oven for 8 to 10 minutes or until golden. Serve hot. Leftovers will keep 1 to 2 days in the refrigerator, tightly wrapped. Serves 10

Mushroom & Sun Dried Tomato Spread

½ lb.

fresh mushrooms
½ lb. portabella mushrooms
½ cup chopped sun dried tomatoes
¼ cup green onions, chopped
3 garlic cloves
2 loaves French bread, cut into diagonal slices
1 tbsp. olive oil
1. In food processor or blender puree all ingredients.
2. Toast bread in oven until lightly browned. Place bread on serving dish or bowl.
3. Place mushroom mixture into bowl. Spread mixture into bread and serve or have each person do their own.

If you are in need of another, in case people don’t like mushrooms or are allergic to them, this is what we have for your super bowl!

Salsa with Shrimp

64 jumbo shrimps
4 16 oz. jars of salsa
½ tsp. salt
½ tsp. pepper
1. In large sauce pan heat the salsa until very hot. Stir it constantly.
2. Add in all the shrimp at once and cook thoroughly for 5 minutes.
3. Place in large serving bowl.
4. You can serve this with white rice. It is a very fast to make and delicious to taste dish for the salsa lover!

To make sure that your guests enjoy more, keep your party lively with some music in between and set the decoration of your home to match up with the kind of food you will prepare and serve them.

Quick Easy Meatloaf Recipes: Super Easy Meatloaf

One of the most popular foods you can make with a couple of pounds of ground beef is meatloaf. All you have to do is add a few ingredients to the meat and pop it in the oven. While it’s cooking, you can prepare a quick salad. The leftovers will make really great sandwiches for lunch.

Here’s the recipe for this quick meatloaf:

2 pounds of lean ground beef, 1 can of tomato soup, 1 yellow onion that’s been finely diced, 1 cup of rolled oats, 2 beaten eggs, 1 tablespoon of steak sauce, 1/2 cup of ketchup and 3 tablespoons of prepared mustard.

Preheat the oven to 350 degrees. Prepare a 9×5-inch loaf pan with cooking spray.

In a large bowl, combine all of the ingredients and, using your hands, or a large spoon, mix it up really well until everything is blended.

Place the meatloaf mixture into the pan and press down. Bake the loaf for 1 hour or until it is lightly browned. Let it stand for 5 to 10 minutes before serving.

BONUS RECIPE

This meatloaf recipe includes salsa and barbecue sauce, which gives it that special Tex-Mex tang.

1 1/2 pounds of ground beef, 2 eggs, 1/2 cup of chopped yellow onion, 1/2 cup of Italian bread crumbs, 1/2 cup of salsa, 1/4 cup of ketchup, 1/4 cup of barbecue sauce, one teaspoon of salt, 1 teaspoon of ground black pepper and 1/2 teaspoon of celery salt.

Prepare a 9×5-inch loaf pan with cooking spray.

In a large bowl, combine the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbecue sauce, celery salt and salt and pepper. With your hands, or a large spoon, mix thoroughly until everything is well blended.

Place the mixture into the pan and press it down. Bake the loaf for 1 hour, or until it is firm and light brown. Take out of the oven and let it cool for up to 10 minutes before serving.

Super Easy Chili Recipes

Think you can’t cook? Think again; super easy chili recipes are one way to feed yourself and/or your family, and not for a lot of money. And lest you think you have to slave over a hot stove all day long to do this, rest assured you don’t. Most recipes can be thrown together in a few minutes and cooked for under an hour; alternatively, of course, you can also use a crockpot for some of them.

If you are a vegetarian, leave the ground beef out of the recipes or substitute textured vegetable protein for a meat like texture. You can find textured vegetable protein (TVP) at health food stores or online.

Basic “super easy chili” directions

If you’re using ground beef, choose ground sirloin and use about a pound’s worth, then add a little salt and pepper. Cook it in a crockpot or Dutch oven over medium heat, stirring, until the meat is done. You can drain the fat off to lower the fat content or can use a baster to remove grease without having to remove the meat.

Ingredients to add

With super easy chili, really, the sky’s the limit. You can add just about anything you’ve got in your pantry and refrigerator and make a decent chili recipe as long as it “fits” the general flavor. One possible variation is to take a pound of ground sirloin, and add the following spices:

Half a teaspoon of salt A quarter teaspoon of pepper Half a teaspoon of cumin 2 1/2 teaspoons of chili powder

To that, add a 15-ounce can of kidney beans that have been rinsed and drained, some ketchup (a tablespoon or two), and a cup and a half of water. Add two 10-ounce cans of tomatoes (undrained). If you want some spice in addition to what you’ve already put in with the above spices, you can choose a variety of canned tomatoes that has green chilies included.

For really quick and easy chili, you can stir in all of the ingredients, bring to a boil, and then reduce the heat and simmer uncovered for 30 minutes. After that, let the chili sit in the pot for another 15 minutes to absorb more flavors and improve even further.

For a little refinement, you can stir the chili powder and cumin into the meat first, sauté, and then add the rest of the ingredients.

Variations

Besides the vegetarian substitution of textured vegetable protein for the meat, you can also add ground turkey instead of ground beef if you want a dish that’s lower in saturated fat.

For a more “Italian” flavor, add half a cup of chopped red bell pepper, half a teaspoon dried oregano, and five cloves of chopped garlic to the recipe above. With this variation, add the garlic and red bell pepper to the cooked meat, stir for three to four minutes, and then add the remaining ingredients.

For more kick, you can also add more green chilies besides those that are already included in the tomatoes above, up to two 4-ounce cans, drained and rinsed. If you want a milder chili, you can omit the chilies altogether, and you can use tomatoes that do not have green chilies included.

These are pretty basic instructions, but as you can see, chili is meant to be a self-invented recipe to some extent. Have some fun with ingredients you’ve already got in your pantry, refrigerator and freezer, and see what you come up with. Remember that it’s meant to be fun and easy, so be creative!
